INGREDIENTS

7 Oz Chicken, sliced
1 Tbsp Tomato coulis
1 Bunch Fresh herbs, (cilantro or chives)
1 Cup Bell pepper, diced
1 Cup Zucchini, sliced
1 Tbsp Capers
1/4 Tsp Grape seed oil

DIRECTIONS

Take your hot pan and place it over medium heat and grape seed oil.

Once your pan is hot, add your leftover chicken to the pan to start the recipe.

After it's lightly seared, add your chopped bell peppers and zucchini.

While they are cooking, season your chicken and vegetables with salt and pepper to taste.

Next for the recipe you will add your capers and leftover tomato coulis to the chicken. If you don't have capers, you can substitute with a little lime or lemon juice to add some flavor to the recipe.
