Janeva’s Pizza Burger Casserole Recipe

Place shredded zucchini in a strainer, sprinkle on about ½ tsp. salt and mix; set aside.
In a medium-sized frying pan over medium/medium-high heat, brown your ground beef. Season it with onion powder, garlic powder, salt and pepper, to taste.
Once the beef is slightly cooked, add your bell peppers, mushrooms, and green onions. Stir to cook veggies and finish browning the ground beef.
Once the beef is fully cooked, drain any fat and set your beef mixture aside.
In a medium bowl, whisk together 4 eggs and 2 egg whites. Once it’s well mixed, set the bowl of eggs aside.
Place the shredded zucchini on a work surface.
Press it with several paper towels to absorb the moisture out of the zucchini, then fold the zucchini into the egg mixture and stir.
Spray a 9 x 9-inch baking dish with cooking spray.
Spread the beef mixture evenly into the pan, then the spaghizza sauce, and top everything with the egg mixture. Season your dish with salt and pepper.
Bake for 25 minutes or just until center of casserole is set and the eggs no longer jiggle. Do not over bake, or your eggs will go from tender to tough.
