1 1/2 Tbsp Olive oil, divided
1/2 Pound Italian sausage links, remove casings (can also sub for turkey sausages and (may contain gluten)
2 Green onions, sliced
1 Red bell pepper, sliced in stripes
1 1/2 celery sticks, chopped
1 Tsp Italian seasoning
2 Garlic cloves, minced
1/2 Bunch Kale, stems removed and roughly chopped
4 Cups low fat chicken broth
Salt, to taste
Black pepper, to taste

In a large pan, heat 1 tbsp olive oil over medium then add sausage and cook for 8-10 minutes or until evenly browned. Stir occasionally and break sausage into smaller pieces. Set aside.

Heat the remaining to the pan and add green onions, red bell pepper, celery and Italian seasoning and cook for 8-10 minutes, stirring occasionally until vegetables are tender.

Add garlic, salt and pepper to taste, and cook for another minute, stirring ingredients together.

Add kale and cook for 1-2 minutes or until it starts to wilt.

Add sausage and broth and bring to a boil then lower the heat and simmer for 15 minutes uncovered.

Ready to serve!
