Try this Italian spin on one-skillet chicken and vegetables!
There’s nothing complicated about how this meal is cooked, which lets the amazing flavors and spices really shine through and take centre stage! The chicken, cooked with garlic, grape seed oil, and classic Italian seasoning, makes for a filling yet healthy meal. 2 Chicken breasts, 6 Oz each
1 Tbsp Grape seed oil
3 Cups Cabbage, shredded
1 Green onion, chopped
2 Celery stalks, finely sliced
1 Canned diced tomatoes, 14.5 Oz, low sodium
Sea salt, to taste
Italian seasoning, to taste
Garlic, to taste
Brown chicken in large skillet with grape seed oil over medium heat. Cook for around 10 minutes per side, depending on the thickness.
While the vegetables are cooking, chop the cooked chicken into bite-sized pieces.
Remove chicken and set aside. In the same skillet, add all the vegetables and sauté.
When the vegetables are translucent and a little brown around the edges, add the chicken back into the skillet.
Cook on low until everything is done and the flavors have mingled, about 5 to 10 minutes.
Garnish with fresh basil.
