Looking for something new and exciting for breakfast? This recipe takes eggs and layers on the cheese, garlic, tomatoes, and basil. The finished meal is rich, savory, and filling. In short? 2 Tbsp Olive oil, extra-virgin
14.5 Oz Canned crushed tomatoes
2 Garlic cloves, thinly sliced
1/2 Tsp Chili flakes
1 Tbsp Onion powder
4 Eggs
1/4 Cup Parmesan, grated
Sea salt & pepper, to taste
Fresh basil leaves, shredded


1 - Heat garlic and chili peppers

Over medium heat, add oil to a large skilled then sauté garlic and chili flakes. Cook for approximately 1 minute or until garlic is fragrant.
2 - Simmer with tomatoes

In the same skillet, add in crushed tomatoes and onion powder. Let simmer and cook for approximately 10 minutes.
3 - Remove or keep tomato sauce

Remove heat and separate sauce into 4 quadrants leaving a “hole” for your egg yolks (as pictured above).
4 - Add eggs to some tomato sauce

Crack eggs one at a time into pan where you made the “holes”. Cover with cheese and season with salt and pepper to taste.

Bake for 12-15 minutes at 400°F.
6 - Let recipe sit after baking

Remove from oven and set aside to cool for 3 minutes. Top with fresh basil.
