A protein-packed breakfast that doesn't skip the flavor!

2 Tbsp Olive oil, extra-virgin
14.5 Oz Canned crushed tomatoes
2 Garlic cloves, thinly sliced
1/2 Tsp Chili flakes
1 Tbsp Onion powder
4 Eggs
1/4 Cup Parmesan, grated
Sea salt & pepper, to taste
Fresh basil leaves, shredded


1 - Heat garlic and chili peppers

Heat oil in a large skillet over medium heat. Once the oil is hot, sauté the garlic and chili flakes until fragrant. (About 1 minute)
2 - Simmer with tomatoes

Add the crushed tomatoes and onion powder and bring the skillet to a simmer. Cook for about 10 minutes.
3 - Remove or keep tomato sauce

Turn off the heat and divide the sauce into your separate dishes. If you want you can always make one big dish and cook the eggs in the same skillet you used for the sauce.
4 - Add eggs to some tomato sauce

Crack the eggs one by one into your dishes. Top with your grated cheese and season with salt and pepper.

Bake in an oven at 400°F for around 12 to 15 minutes, or until it is set as desired.
6 - Let recipe sit after baking

Remove the pan from the oven and let it sit for 3 minutes. Garnish with fresh basil.
