These Hidden Veggie Meatballs are a delicious dish to make for a dinner with the family or to bring to a potluck. The combination of flavors will have everyone coming back for seconds! The best part is that it only takes 30 minutes to prepare. For those who don’t have a lot of time in their day to cook a nutritious meal, these Hidden Veggie Meatballs will do the trick.


1 Pound Ground sirloin
1/2 Tbsp Sea salt
1/2 Tsp Pepper
2 Tsp Onion powder
1 Zucchini, Shredded
1/2 Cup Cauliflower, Shredded
1 Egg


Step 1 - Season beef in bowl

Preheat your oven to 375ºF. In a large bowl, season beef with garlic and onion powder, salt, and pepper.
Step 2 - Zucchini and cauliflower in bowl with beef

Grate the zucchini and cauliflower into shreds.
Step 3 - Mix ingredients in bowl

In the same bowl, add in the zucchini, cauliflower, and egg and mix together until thoroughly combined.
Step 4 - Make mixture into balls

Form beef mixture into 1-inch round meatballs.

Spreadout meatballs on a baking tray. Bake for approximately 20-30 minutes or until thoroughly cooked. Cut one in half to check if it’s cooked all the way through.
Step 6 - Serve with ketchup
