INGREDIENTS

1 Lime
1/2 Cup Grape seed oil
1/2 Cup Fresh cilantro, chopped
1/4 Cup Fresh mint, chopped
2 Tsp Coriander seeds, toasted and finely chopped
2 Red Thai chillies, finely chopped
1 Tsp Garlic, finely minced
1 1/4 Lb Skinless Salmon Fillet, cut into 1-inch cubes

DIRECTIONS

In a large bowl stir cilantro, mint, chillies, garlic, coriander seeds, and oil. Zest and juice lime to get approximately 2 tbsp of juice and 1 tsp of zest. Add juice and zest to bowl and mix in with other ingredients.

Add cubed salmon into bowl and coat evenly with mixture. Cover your bowl and chill in the fridge for 30 minutes.
