INGREDIENTS

2 Eggs, hard boiled
3/4 Cup Cucumbers, diced
3/4 Cup Tomato, diced
1/4 Cup Tomato coulis
1/4 Cup Onion
1 Tbsp Garlic
3 Tbsp Apple cider vinegar
1 Tsp Olive oil

DIRECTIONS

Begin with a large blender and add cucumber, tomatoes, tomato coulis, onions, garlic, apple cider vinegar, oil, salt, and pepper.

Note: It’s better to add less liquid to start, and only add more if necessary.

Blend your ingredients until everything is smooth.

Pour soup into a bowl and top with thinly sliced cucumbers and halved boiled eggs.
