INGREDIENTS

2 Can Chickpeas, drained and rinsed
1 Handful Cherry tomatoes, halved
1/4 Pound feta cheese, crumbled or cubed
1/4 Cup almonds, chopped toasted
salt and black pepper, to taste
Greek yogurt, to taste
Green onions, for topping

Chimichurri sauce

1 Cup Flat-leaf parsley
1/2 Cup Fresh mint
1/2 Cup Cilantro
1 Jalapeno
Pinch Red pepper flakes, optional
1 Garlic clove, peeled
1 Tbsp Lime juice
1 Tbsp Apple cider vinegar
1/2 Tsp Kosher Salt, plus more to taste
1/2 Cup Olive oil

DIRECTIONS

For the Chimichurri Sauce, put all ingredients in the magic bullet.

In a large bowl, gradually combine all ingredients with the chimichurri. Season with salt and pepper to taste.
