Halloween Monster Bark
Sweet Treat with No Tricks
Sometimes you just want a little something that will make you feel like you’re treating yourself. And Halloween can be a challenging time for those with specific health goals. This dessert/snack will give you a taste of sweetness without throwing your efforts out of whack. Sweetened with fruit, this bark is the perfect pairing to good health.

20 Oz Coconut yogurt, non-dairy unsweetened
1/4 Cup blueberries
1 kiwis, peeled and sliced
1/2 Nectarine, diced
Monster Googly Eyes
1/4 Cup Powdered sugar
1/4 Tsp Tapioca Starch
1/4 Tbsp Corn syrup
1 Oz Coconut milk
1 Drop vanilla extract
Pinch Turmeric, for yellow eyes
1 Drop natural green coloring, for green eyes
1 Oz chocolate chips, mini non dairy
- Line an 8×8 pan with parchment or not.
Sliced the kiwi and nectarine.
- Pour the coconut yogurt into the pan.
- Top with the sliced kiwi, nectarine, and blueberries.
- Place in freezer until set.
- Cut into pieces and allow the little ones to choose their own yogurt bark.
