If you’re a fan of chicken kabobs and want to explore variations on this fun meal, then you’ve got to give this recipe a try. Mushrooms, bell pepper, and zucchini work perfectly with this easy dish. Whether you’re eating with family or friends, this chicken kebab recipe is guaranteed to be a blast.


7 Oz Chicken, cubed
1 Lemon, juiced
1 Garlic clove, minced
1 Cup Red bell peppers, cubed
1/2 Cup Baby portobello mushrooms, cubed
1/2 Cup Zucchini, cubed
1/4 Tsp Grape seed oil

Set your oven to broil and let it preheat. While it's warming up, heat up a non-stick pan with grape seed oil and add the cubed bell peppers, zucchini, and mushrooms. Mix in the minced garlic clove at this point as well.

Next, add the chicken, allowing it to sear and cook evenly.

When the chicken is cooked, remove everything from heat and allow it to cool.

To help prevent your rosemary sticks from singing or otherwise burning, you can spray them with a bit of water ahead of time. Use them as your skewers and thread them through your chicken and vegetables.

Place your kebabs into the oven for a few minutes. Keep a close eye on them, and when they're done, pull them out and drizzle them with freshly squeezed lemon juice.
