This low-fat frittata is the perfect meal for a busy person. Not only can it be prepared quickly, but it also delivers on essential nutrients and tastes incredible.

2 Cup Tomatoes, 1 cup diced, 1 cup sliced
3 Garlic cloves, thinly sliced
4 Eggs

Preheat oven to broil.

Take a non-stick pan and place it over medium-high heat.

Once the pan is hot, add your diced tomatoes and garlic, seasoning with salt and pepper to taste.

In a separate bowl, whisk your eggs together.

Pour your whisked eggs over the vegetables in the pan and mix everything together with a spatula.

If you have any fresh herbs, add them to the dish.
