Spice up today’s breakfast with a low-fat frittata that’s loaded with vegetables. It’s the perfect way to use those leftover sautéed vegetables from the night before… and we’re sure this low-carb frittata will make breakfast your favorite meal of the day!

2 Cup Vegetables (jicama, bell peppers, celery root and zucchini), sautéed
1/2 Cup Vegetable coulis
1 Jalapeno pepper, chopped
Begin by heating your non-stick pan over medium-high heat.
Once the pan is hot, add your leftover sautéed vegetables to reheat them.
Immediately add your eggs and let them “grip” the pan after mixing them into the vegetables.
Reduce heat to medium and add the vegetable coulis on top.
Chop your jalapeno pepper and use them to top the frittata.
Cover the pan with a lid and let cook for about 5 minutes.
