1 1/2 Pound Beef flank steak, butterflied
2 Tbsp Avocado oil
1/2 Green pepper, thinly sliced
1/2 Red pepper, thinly sliced
1/2 Yellow pepper, thinly sliced
3 Garlic clove, minced
1 1/2 Cup Spinach
1/2 Leeks, thinly sliced
3 Tbsp Taco seasoning
salt and black pepper, to taste
4 Oz Mozzarella cheese, OPTIONAL
, long toothpicks, or short skewers
