INGREDIENTS

4 Tbsp Olive oil
Half Eggplant, Sliced
1 Cup Mushrooms, Chopped
4 Red pepper, Roasted, and chopped
700 g Marinara sauce, With onions and garlic
2 Zucchini, Thinly sliced
400 g Kale, Defrosted
250 g Ricotta
25 g Parmesan, Shredded (or vegetarian alternative)
25 g pine nuts, optional

DIRECTIONS

Mixed ricotta and kale in bowl

Preheat your oven at 375C. Mix the ricotta with the frozen kale.

Add 2 tbsp of olive oil to a large non-stick pan and cook the mushrooms and roasted red peppers for 5 minutes until softened.

Now add the the marinara sauce in the casserole dish.

Add a first layer of the zucchini then top it with your cooked mushrooms and roasted red peppers. Spoon half of the vegetables into a baking dish of about 20 x 30cm and then layer on half of the marinara sauce, and top off with eggplants.

Place the rest of the vegetables over the eggplant, and add another layer of marinara sauce, ending with another zucchini layer again.

Drain any excess liquid from the kale and ricotta mix and spoon it on top of the last layer of zucchini. Sprinkle with the remaining parmesan cheese and pine nuts. Bake for about 30 minutes.

Once cooked, slice the lasagna in 4 serving pieces.
