INGREDIENTS

1/2 Cup Tomatoes, diced
1/4 Cup Fresh basil, chopped
1/4 Cup Cucumbers, seeded & diced
2 Tbsp Green onions, chopped
1 Tsp Olive oil
1 Tbsp Apple cider vinegar
1 Garlic clove, minced
1/4 Cup White beans, cooked
1/4 Cup Chickpeas, cooked
1/4 Tsp Cumin powder
1/4 Tsp Chili powder
1/4 Tsp Coriander, chopped
1/4 Cup Fresh parsley, chopped
1/4 Cup Fresh cilantro, chopped
1 Green onion, chopped
1/4 Tsp Grape seed oil

DIRECTIONS

Bruschetta: In a medium sized bowl, mix all ingredients; set aside in the fridge.

Falafel (4 balls): In a food processor, blend all ingredients; make a thick paste. Now, once the desired consistency has been reached, make 4 small sized balls (if they are too dry, you can add water).

Then, in a hot non-stick pan with grape seed oil, cook the falafel balls. Place on a plate with Bruschetta.
