Sometimes it’s hard to copy the professionals and end up with a beautiful looking dish. But anyone can take this eggplant recipe, with about 30-40 minutes and be left with a meal you’re proud to serve to your guests.

They look great, but they can also taste as amazing as you want them to. We used basil and thyme but you can use any spice that compliments the eggplant and Parmesan cheese!
