Bite-sized pizza with full-serving flavor!

Mozzarella cheese, marinara sauce, and… eggplant? Maybe you’ve had eggplant on pizza before, but have you ever tried pizza crust made out of eggplant? This recipe is quick, easy, and surprisingly delicious. To top it all off, it’s healthy as well! 1 Eggplant, cut into ¼ inch slices
3 Garlic clove, minced
1 Tbsp Sea salt
1 Tbsp Olive oil
1 Tsp Italian seasoning
1 Cup , Janeva's Marinara sauce
1/2 Cup Mozzarella cheese, shredded
Green onions, to taste


1. Salt eggplant, wait until dry

Sprinkle the eggplant with the coarse salt, and let sit on paper towels for 10 to 15 minutes, then wipe dry.
Place mixture onto eggplant, bake.

Preheat oven to 400°F. In a small bowl, combine the garlic, olive oil, and Italian seasoning, Brush the mixture onto both sides of the eggplant slices and bake for 15 minutes.
Add marinara sauce and cheese.

Remove eggplant from oven and flip eggplant slices. Top each slice with a tablespoon of marinara sauce, and a sprinkle of cheese.
Bake until cheese if fully melted.

Return to oven and bake for another 10 minutes, or until cheese is fully melted.
Top it with green onions.
