Mozzarella cheese, marinara sauce, and… eggplant? Maybe you’ve had eggplant on pizza before, but have you ever tried pizza crust made out of eggplant? This recipe is quick, easy, and surprisingly delicious. To top it all off, it’s healthy as well! 1 Eggplant, cut into ¼ inch slices
3 Garlic clove, minced
1 Tbsp Sea salt
1 Tbsp Olive oil
1 Tsp Italian seasoning
1 Cup , Janeva's Marinara sauce
1/2 Cup Mozzarella cheese, shredded
Green onions, to taste


1. Salt eggplant, wait until dry

Place eggplant on paper towel then season eggplant with coarse salt. Wipe dry after 10-15 minutes.
Place mixture onto eggplant, bake.

Preheat your oven to 400°F. Mix together garlic, Italian seasoning and olive oil in a small bowl. Coat eggplant with mixture on both side then bake in oven for about 15 minutes.
Add marinara sauce and cheese.

Once cooked through, remove from oven and flip eggplant. Cover eggplant tops with 1 tbsp marinara sauce then sprinkle with cheese.
Bake until cheese if fully melted.

Bake in oven for another 10 minutes or until cheese is golden and melted.
Top it with green onions.

Garnish with green onions to taste.
