This eggplant dressing adds a dash of horseradish for great flavor!
In a blender, add cucumber, eggplant, apple cider vinegar, maple flavoured syrup, horseradish and olive oil; blend for 15 to 20 seconds. Sprinkle sea salt and pepper, to taste; stir. Ready to serve!
1/2 Cup Cucumber, diced
1/4 Cup Eggplant, marinated in vinegar
2 Tbsp Apple cider vinegar
2 Tbsp Maple flavoured syrup, low fat, low carb
1 Tsp Horseradish
6 Tbsp Olive oil
