1 Tsp Dijon mustard
1 Tbsp Apple cider vinegar
1 Tbsp Olive oil
4 Oz Chicken, cooked & cubed
1/2 Cup Green onions, chopped
1/2 Cup Red bell peppers, chopped
1/4 Tsp Grape seed oil
1 Cup Spinach, finely sliced
Start by mixing your vinaitrette.
Start with a sealable jar – it will be where the vinaigrette will be stored.
Mix Dijon mustard, apple cider vinegar, and olive oil into the jar.
Shake the jar well until all ingredients are mixed.
Next, prepare your Eggs and Spinach Roll.
In a mixing bowl, mix eggs, chicken, green onion, and the bell peppers.
Take a non-stick pan and place over medium heat.
Add grade seed oil to your hot pan, then pour in the mixture of eggs, chicken, green onion and bell peppers.
When the egg reaches a light brown color, flip it and let it continue cooking.
Once the egg is cooked to your liking, set it on a flat surface and place spinach in the middle of the omelette.
Finally, drizzle the vinaigrette over the spinach and roll.
