INGREDIENTS

1 Tsp Dijon mustard
2 Tbsp Apple cider vinegar
1 Tbsp Olive oil
1 Cup Kale, thinly sliced
1 Cup Red bell peppers, sliced
3 Eggs, hard or soft boiled, halved

DIRECTIONS

Start by making your vinaigrette dressing.

In a sealable jar (so you can save some dressing for later), add your Dijon mustard, apple cider vinegar, and olive oil.

Shake the jar until all the ingredients are mixed.

If the ingredients settle before you dress your salad, you can shake the jar again so everything is well mixed!

Move onto your kale salad.

On a plate, layer the kale, red peppers, and eggs.

Once layered to your liking, slowly drizzle about half of the vinaigrette across the dish.
