3 1/2 Oz Cod filet
3 1/2 Oz Shrimp
2 Cup Fennel, thinly sliced
2 Celery stalks, cubed
1 Leaf of red swiss chard, largely sliced
1 Lime slice
1 Garlic clove
1 Jalapeno pepper
2 Tbsp Lime juice
Fill a medium sized pot
halfway with water and bring it to a boil. Once it's boiling, add the celery stalks, lime juice, jalapeño pepper, and garlic. Back off the heat and let it simmer. This will serve as your court-bouillard
, or "short broth," perfect for poaching.
Add fennel and Swiss chard to the pot, allowing them to simmer briefly.
Season your cod filet with sea salt and freshly ground black pepper
before adding it to the pot. Cover the pot's contents and leave it for approximately seven minutes.
Check on the filet - if it's nearly cooked, then it's time to add the shrimp. Cover once more for around a minute, or until everything's fully cooked.
