INGREDIENTS

1/4 Tsp Grape seed oil
7 Oz Chicken, sliced
1/4 Cup Zucchini, pearls
1/2 Cup Cherry tomatoes, confit
1/4 Cup Green onion
1 Cup Kale, blanched and sliced
1 Tbsp Lime juice

DIRECTIONS

Start by heating up a non-stick pan with grape seed oil before adding your chicken. Season it with sea salt and pepper to your taste, and allow it to sear.

Next, add your zucchini pearls and tomatoes confit to the chicken. You can also add another pinch of salt if you desire.

Once the chicken is nearly fully cooked, mix in the green onions. There should still be a little liquid in the pan from your zucchini and tomatoes, which will complement the onions perfectly.

Toss in your blanched kale at this point. It just has to reheat, so pour in the lime juice to add extra flavor and to deglaze the pan.
