Try this Curry Chicken Stir Fry for a delicious meal!

1 Tsp Grape seed oil
8 Oz Chicken breast, sliced
1 Garlic clove, minced
1 Cup Zucchini, cubed
1 Cup Mushrooms, halved
1 Tsp Curry powder
1 Tbsp Coriander, chopped

In a hot non-stick pan with grapeseed oil, add chicken; saute.

Once chicken is cooked through, remove and set aside.

Now, in the same hot non-stick pan, add garlic, saute for a few seconds and then add mushrooms and zucchini, let cook until tender.

Now, add chicken back into the pan and sprinkle in the curry powder, sea salt & pepper; mix well with remaining ingredients.

Top with fresh coriander.
