INGREDIENTS

7 Oz Pork, cooked and thinly sliced
1/2 Cup Red bell peppers, diced
5 Cherry tomatoes, sliced in two
1 Cup Cucumbers, thinly sliced
2 Tbsp Bell pepper coulis dressing
2 Radicchio leafs, thinly sliced

Note: You can prepare the cucumbers yourself with a Chinese mandolin slicer, or you can purchase pre-made noodles at the supermarket.

Begin with sliced cooked pork, thinly sliced cucumbers, one radish, finely chopped bell peppers, and 5 cherry tomatoes.

Once you have your ingredients together, grab a medium-sized mixing bowl.

Mix your sliced pork and chopped bell peppers into the bowl.

Next, cut the cherry tomatoes into halves and add them into the bowl.

Add the thinly sliced cucumber spaghetti and drizzle on the Bell Pepper Coulis Dressing.

Sprinkle sea salt and fresh pepper to taste.
