Grilled zucchini, delicious chicken, and cauliflower rice? You're going to love it!

The blend of herbs and spices really comes alive under the broiler, adding that extra little kick of texture that keeps us coming back to the grill time and time again. INGREDIENTS

1 Cup Cauliflower, Riced
8 Oz Chicken breast, Finely sliced
1/2 Tsp Ground coriander
1 Zucchini, Thinly sliced
2 Tsp Grape seed oil
2 Garlic clove
1 Tbsp Ginger, Peeled and sliced thinly, then chopped
2 Tbsp French green onion, Finely sliced

DIRECTIONS

Set your oven to broil on high and line a baking tray with tinfoil.

Toss the zucchini in a teaspoon of grapeseed oil, sea salt, and pepper, and add to the baking tray. Broil six inches from the heat for 8 minutes or until lightly charred. Flip zucchini and cook for another 3 minutes.

Heat remaining oil in a wok. Add the chicken and season with ground coriander, sea salt, and pepper before cooking for 5 minutes, then remove from heat and set aside.

Add garlic and ginger to the same wok, stir frying for a few minutes before adding riced cauliflower and green onion. Cook until the cauliflower rice has softened. Add the chicken and fold through with the grilled zucchini. Plate over a mixture of herbs or mixed greens of your choice.
