INGREDIENTS

2 Tbsp Extra virgin olive oil
2 Tsp Ground cumin
Chili flakes, Pinch
5 Cups Carrots, Washed, coarsely
140 g Split red lentils
1 Vegetable stock, Whole Ice Cube Tray
1/2 Cup Coconut milk
1 spoon Greek yogurt, Plain

DIRECTIONS

Dry fry ground cumin and chilli flakes for 1 min in a large saucepan.

Add the extra virgin olive oil, carrot, red lentils, vegetable stock and coconut milk to the saucepan. Bring to a boil and simmer for approximately 15 minutes. The lentils should be soft.

Put the soup in a food processor and blend until smooth.

Let the soup cool and season to taste. Add a spoon of plain greek yogurt to finish off the soup.
