INGREDIENTS

1 Cup Tomato, diced
1 Cup Cucumbers, diced
1 Tbsp Garlic
1 Tbsp Pickled ginger
1 Cup Vegetable stock
7 Oz Shrimp, cooked
1/2 Cup Pea shoots
2 Tsp Saffron dressing

DIRECTIONS

In a blender, blend together tomatoes, cucumbers, garlic, ginger, vegetable stock, two shrimp, sea salt, and pepper.

Pour soup in a bowl and top it off with leftover shrimp, pea shoots, and saffron dressing
