Cold cucumber soup with mint is a great way to freshen up any meal!
1 1/2 Cup Cucumber, diced
1/2 Cup Tomatoes, diced
1/2 Cup Green onion, chopped
1 Garlic clove, minced
1 Branch Fresh mint
1 1/2 Oz Balsamic dressing, low fat/low carb
7 Oz Chicken, cooked
In a large bowl, mix all ingredients together except chicken and then, pour into a food processor; blend.
Once blended, pour soup into a serving bowl and add chicken on top.
