Place your non-stick pan over medium heat. Add your eggplant and let it cook for a minute.
Once the eggplant has started cooking, add your yellow peppers, celery, sea salt, pepper, and pour your apple cider vinegar over everything.
Let your dish simmer for another minute, then add the horseradish and mix it in with your stir fry.
Once your vegetables are fairly soft, add your oyster mushrooms and toss your stir fry. If you prefer softer vegetables in a healthy chicken stir fry, add a tablespoon or two of water as your vegetables finish cooking.
After all your vegetables have cooked, mix in half your basil leaves and set everything aside on a plate so you can start your chicken!
Returning to your hot, non-stick pan, add your chicken and season it with sea salt and pepper to taste.
Sear your chicken.
Once your chicken is seared, add 1 oz of water to deglaze the pan, getting all the leftover bits of chicken and vegetables from your stir fry off the bottom of the pan.
Add the rest of your basil to the pan, mixing it in with your chicken. Continue cooking until your chicken is ready and the water has evaporated.
Once your chicken is cooked, it is ready to be added to your "garden!"
