Thinly sliced vegetables are a great addition to low-fat chicken recipes like this one. And when it comes to flavor, this meal’s got it out – spicy, sweet, and savory, all packed into each bite. If you’re looking for a quick meal that doesn’t skimp on the good stuff, then you’ve got to try chicken with julienne vegetables for dinner tonight!


7 Oz Chicken, thinly sliced
1 Cup Yellow pepper, julienned
1 Cup Zucchini, julienned
1 Tbsp Garlic, minced
2 Tbsp Honey dijon dressing, low fat/low carb
1 Dill pickle, chopped
1/2 Tsp Jalapeno pepper, minced
1 Tbsp Green onions, chopped

You can julienne all your vegetables before you start cooking to save time and make sure you're not held up on any one step. When it's time to start cooking, heat up a non-stick pan and add your chicken, letting it sear.

Add the sliced peppers next, allowing them to cook. They'll take a bit longer than the other vegetables to cook, so keep an eye on them.

Next, add your julienne zucchini, making sure to season with sea salt and pepper to taste. Stir occasionally to make sure all the flavors are incorporated nicely.

By this point, the peppers should be tender, which means it's time to add the garlic and dressing.

Next, mix in the pickles and jalapeños. Give everything a good stir; the chicken should be cooked by this point, so remove everything from heat and plate.

Top with green onions, and you're ready to go.
