This amazing chicken with celery root and vegetables recipe has it all!

INGREDIENTS

1/4 Tsp Grape seed oil
7 Oz Chicken, sliced
1 Cup Celery root, blanched and sliced
1 Garlic
1 Cup Tomato, sliced
1 Bunch Chives

Before you begin, you will want to have sliced and blanched your celery root and prepare a garlic puree.

In a hot, non-stick pan over medium heat, add your grape seed oil and chicken.

Let your chicken sear on both sides.

Once your chicken is seared, add your celery root and season your dish with salt and pepper to taste.

At this point, you can add your garlic puree and stir it around in the pan to make sure it doesn't stay in one big chunk.

While your celery root and chicken is cooking, you can finely slice your chives.

Next, add some of your chives (saving the rest for later) and your tomatoes to the chicken and celery root.

Let the vegetables cook with your chicken for two to three minutes to make sure your chicken is well cooked.

Once everything is cooked, add your chives.
