Chicken with Brussels Sprouts and Pea Shoots

On medium heat, add grape seed oil, chicken, sea salt, and pepper to a non-stick pan.
Sear the chicken on each side.
Cut the Brussels sprouts into quarters. Add the Brussels sprouts to the pan.
Chop up the chives and half of the hot finger pepper, while the chicken and Brussels sprouts are cooking and add the garlic.
Set aside the chicken and Brussels sprouts on to a plate.
Add a dash of grape seed oil.
Once the oil is hot, add pea shoots and the hot finger pepper to your pan to sear them. Make sure that they are not overcooked. The pea shoot stems should retain some moisture.
Season the pea shoots with sea salt and pepper to taste. Combine the pea shoots with the chicken and Brussels sprouts.
