1 Tsp Grape seed oil
2 Cloves Garlic, Minced
2 Tsp Italian seasoning
1 Tsp Salt
1 Tbsp Onion powder
1/4 Cup Egg whites
2 Pounds Ground chicken
1 Cup Marinara sauce
1 Cup Green onion, Chopped
1 Cup Green pepper, Finely chopped
Fresh basil, Chopped, used for garnish
Preheat your over to 400°F then in a non-stick pan heat grapeseed oil. Add pepper, garlic, and green onions to pan and cook until onions are fragrant and translucent.
Using a large bowl, combine ground chicken, egg whites, and spices.
Flatten the ground chicken mixture on a parchment paper until it is approximately 1-inch thick. Add pepper mixture in the centre and roll the meat around it.
Remove parchment paper then cut roll into 1½-inch thick pieces.
Grease a muffin pan then add in rolls. Bake in oven for approximately 40 minutes or until chicken is thoroughly cooked at 400°C.
Cover with marinara sauce and bake in oven for another 20 minutes at 400°C.
