INGREDIENTS

1/4 Tsp Grape seed oil
7 Oz Chicken, sliced
1/2 Cup Chicken stock
1 Tsp Dijon mustard, mixed with 1 tsp tomato paste
1 Cup Celery root, blanched & julienned
1 Cup Brussels sprouts, blanched
1 Tsp Cilantro

DIRECTIONS

Before you begin, you will have to have blanched your Brussels sprouts and peeled the leaves apart. You will also want to julienne your celery root.

Heat a non-stick pan with grape seed oil over medium/high heat.

Once your pan has heated, add your chicken to the pan. Season it with sea salt and pepper and sear the chicken on both sides.

After the chicken has lightly seared, it's important to add your chicken stock right away for the fricassée.

Add your Dijon mustard mix and mix it in with your chicken stock.

Add your celery root and Brussels sprouts to the pan for your chicken fricassée.

Let your Brussels sprouts reheat and get nice and soft.

While your fricassée is cooking, add fresh cilantro. Cilantro is the perfect way to compliment your chicken stock and bring together all the flavors.
