Chicken fajita soups are a favorite at many dinner tables, so it can be tough to give up the comforting and exciting flavors when you’re trying to stick to a paleo diet, or a low-fat low-carb diet. Thankfully, this delicious (not to mention spicy!) Chicken Fajita Soup recipe, which is Paleo Diet friendly, has great taste that’s sure to satisfy. Plus, it’s a healthier option, ditching the carbs typically found in tortillas.

INGREDIENTS

6 Oz Chicken breast, thinly sliced
1/2 Cup Bell pepper, chopped
1/2 Cup Mushrooms, sliced
2 Garlic clove, minced
1 Tbsp Onion powder
1 Cup Chicken stock
1 Tbsp Grape seed oil
1 Tbsp Taco seasoning, Janeva's recipe
1 Cup Canned diced tomatoes
1/4 Cup Green chilli peppers, (canned or fresh)
Sea salt & pepper

DIRECTIONS

Pour and then heat up the grape seed oil in a large pot. Sauté bell pepper, garlic, and mushrooms with onion powder.

Add and then sear the chicken evenly on both sides.

Pour in the chicken stock then add tomatoes and green chili peppers.

Add and stir in the taco seasoning.

Simmer for approximately 20 minutes until the chicken is tender.
