1 Green chilli peppers, long, de-seeded, and finely chopped
2 Tbsp Fresh coriander, chopped
1 Tbsp Lime juice
In a large bowl, add cucumber, tomato, chili pepper, coriander, and lime and mix together.
Add in salt and pepper to taste.
In a skillet, add grapeseed oil and heat on medium-high. Add chicken slices and cook each side for about 2 minutes, ensure chicken is cooked all the way through.
To serve, plate cooked chicken on a bed of mixed greens and add cucumber salsa on top.
