2 Chicken breasts, 6 to 8 oz each
1 Tbsp Grape seed oil
Mixed greens
2 Cucumbers, finely diced
2 Tomatoes, finely sliced
1 Green chilli peppers, long, de-seeded, and finely chopped
2 Tbsp Fresh coriander, chopped
1 Tbsp Lime juice


1. Combine ingredients in bowl.

Combine cucumber, tomato, chili pepper, coriander, and lime juice in a bowl.
2. Add salt and pepper.

Season with salt and pepper.
3. Cook chicken slices.

Cook thin chicken slices in a hot skillet with grape seed oil for 2 minutes on each side or until cooked through.
4. Serve chicken with cucumber salsa.

Serve chicken on a bed of mixed greens, topped with your cucumber salsa.
