Give our low-fat low-carb Chicken Cacciatore a try for dinner tonight!
1/2 Tsp Grape seed oil
7 Oz Chicken breast, sliced
1 Garlic clove, minced
1/2 Cup Red bell peppers, chopped
1/2 Cup Green bell peppers, chopped
1 Cup Mushrooms, sliced
1 Tsp Tomato paste, low sodium
1/2 Cup Canned diced tomatoes, low sodium
2 Tbsp Chicken stock, low sodium
3 Fresh basil leaves, (3 to 4 ) chopped
Heat grape seed oil over medium high heat in a large non-stick skillet.
Add chicken strips and sauté on both sides for 4 to 6 minutes.
Remove chicken & set aside.
Add garlic, peppers and mushrooms to skillet, sauté for 5 minutes or until peppers start to soften.
Return chicken to skillet.
Add tomato paste, diced tomatoes, chicken broth, basil, sea salt and pepper.
Let simmer for 2 minutes.
