In a hot non-stick pan, add your chicken and cook it until the chicken is well seared.
Once the chicken is seared, add the peppers and garlic and let everything cook until the bell peppers are tender.
Season your chicken with sea salt & pepper, to taste.
Once the peppers are tender, add your blanched baby bok choy to the chicken.
While everything is cooking, mix your Italian dressing. When your bok choy and chicken are almost done cooking, add your Italian dressing to the dish to heat everything.
Lastly, lightly place the inoki mushrooms in the pan over your other ingredients. Do not mix the delicate mushrooms in with the dish, but let them steam over top of your dish.
