2 Tbsp Olive oil
6 Oz skinless boneless chicken breast
1/2 Tsp Ground coriander
3 Tbsp Lemon juice
4 Cup Baby Arugula
4 Radishes, sliced
1/2 Red onions, sliced
Sea salt & pepper, to taste


Arugula Chicken Salad Step 1 - season and cook the chicken

Start by seasoning chicken breast with salt, pepper, and ground coriander. In a medium-sized pan, heat grape seed oil over medium then cook chicken thoroughly. Once the center is no longer pink, set aside.

In a large mixing bowl, add lemon juice, olive oil, sale, and pepper and mix together.

In the same bowl, add radishes, onion, and arugula and mix together until all veggies are evenly coated in dressing.
