1 Tbsp Grape seed oil
1/4 Cup almond meal
1/4 Tsp garlic salt
1/4 Tsp Black pepper
1 Cauliflower
4 Oz baby food carrots
1 Can Coconut milk
1 Tbsp Tahini
1 Tbsp Olive oil, for extra creaminess, optional
1 Tsp Onion powder
3/4 Tsp ground mustard
1 Tbsp Fresh parsley, chopped
1/2 Tsp Salt

step #1

Cut cauliflower into 1/2-inch pieces, then into 1/2-inch strips, to create "macaroni-shaped" rectangle pieces (many of the florets will crumble, which is normal).

step #2

In a large deep-sided pan, melt olive oil over medium-high heat.

step #3

Add almond meal, garlic salt, and pepper. Cook just until the almond meal begins to brown. Transfer to a small bowl, set aside.

step #4

Place cauliflower in a pan. Add carrots, coconut milk, tahini, olive oil, onion powder, ground mustard, salt and pepper.

step #5

Cover and cook 10 minutes, until boiling.

step #6

Remove the lid and cook until sauce begins to thicken and cauliflower is very tender. Sprinkle with almond meal "breadcrumbs" and parsley.

step #7

Ready to Serve!

Did you know?

A surprising fact about cauliflower is that it actually contains quite a few antioxidants. Cauliflower contains caffeic acid, ferulic acid, beta-carotene, rutin, beta-cryptoxanthin, cinnamic acid, kaempferol, and quercetin to name a few.

Because it is so rich in nutrients, cauliflower has been linked to helping prevent against colorectal and prostate cancer and also plays a role in regulating blood cholesterol.
