Packed with amazing flavor, these Buffalo Chicken Lettuce Wraps let you swap out the carbs for something lighter but just as tasty! Marinated Buffalo chicken pairs with diced tomatoes, fresh avocado, and a pinch of green onion to create something special. Add in the familiar taste of ranch dressing and just enough cilantro, and you’ve got a winning combination!
8 Oz skinless boneless chicken breast, cut into cubes
1/2 Cup Buffalo wing hot sauce, low fat low carb
1 Tbsp Grape seed oil
1/2 Cup Tomato, diced
1/4 Cup avocado, diced
1 Tbsp ranch dressing, low fat low carb
Green onions, sliced
Add chicken and half a cup of Buffalo hot sauce to a bowl, mixing the sauce in with the chicken.
Cover and place in the fridge for 30 minutes.
Over medium-high, heat 1 teaspoon of grape seed oil in a large pan.
Add the marinated chicken to the hot pan, turning frequently until cooked through for approximately 7 to 10 minutes, depending on the size of the cubes.
Prepare the lettuce wraps to your taste and preference with diced tomatoes, ranch dressing, diced avocado, green onions, and chopped cilantro.
