Light and fluffy egg muffins get a boost of spice and satisfaction with delicious Buffalo sauce and savory chicken. Ideal for breakfast, lunch, or as a snack, these muffins are sure to satisfy! Combining that familiar egg muffin texture with just the right amount of heat, you can add a bit of blue cheese for an even more alluring set of flavors. Best of all, you’re done in 20 minutes!

INGREDIENTS

8 Eggs
6 Oz Chicken, Cooked and chopped
1/4 Cup Blue cheese, Crumbled (optional)
3 Tbsp Buffalo wing hot sauce
2 Green onions, Chopped
1 Celery, Chopped
1 Garlic clove, Minced
Sea salt & pepper, To taste

Preheat oven to 350°F. In a large mixing bowl, whisk together eggs with a fork.

Next, add the chicken, Buffalo wing sauce, crumbled blue cheese, green onions, celery, garlic, sea salt, and pepper to the eggs. Mix well.

Pour your mixture into a lightly oiled muffin tin. This recipe should fill 12 spaces.

Bake for 20 minutes, or until muffins are fluffy and golden brown on top.
