INGREDIENTS

1 Eggplant, cut in strips
2 Tbsp Stevia
4 Cups Brussels sprouts, shredded (about 1 pound)
1/2 Cup Extra virgin olive oil, divided
2 Tbsp Fresh lemon juice
2 Tsp Dijon mustard
1 Tbsp Soy sauce
1 Tsp Smoked paprika
1 Tsp Sea salt

DIRECTIONS

To get started, preheat your oven to 400°F then cut the eggplant in stripes.

In a small bowl, combine soy sauce and paprika. Brush the mixture over the eggplant after laying it on a baking tray.

Bake for 10-15 minutes or until slightly crispy.

In a large skillet, heat olive oil over medium-high then add eggplant strips. Fry for about 2 minutes per side or until slightly crispy. Once cooked, remove eggplant bacon from pan and blot dry with a paper towel. Cook the remaining strips.

Combine the Brussles sprouds, oil, Dijon mustard, lemon juice, and salt in a medium bowl. Toss ingredients together until evenly coated.

Then add the eggplant bacon bites.
