4 Eggs, whisked
1/2 Cup Mozzarella cheese, optional
1 Cup Fresh Mushrooms, chopped
1 Cup Spinach, chopped
2 Bell peppers
2 Garlic clove, minced
Sea salt & pepper, to taste
Preheat oven to 375°F. Cut the tops off of each bell pepper; remove seeds and pith.
Bake bell peppers for 5 minutes.
Meanwhile, in a medium-sized bowl, mix green onions, mushrooms, spinach, garlic, and eggs together.
Remove the bell peppers from the oven and fill with egg mixture, and then place in the oven for 35 minutes or until cooked.
Remove from the oven and add mozzarella cheese. Broil in the oven for another 5 minutes, or until cheese is melted.
