Skip the greasy fast food pizza order and make our vegetarian BBQ Chickpea Pizza instead! This healthy recipe is perfect for those wanting to lose weight without having to sacrifice their love for pizza. A golden brown cauliflower crust is topped with mozzarella cheese, chickpeas coated in BBQ sauce, crushed pineapple, and a hot pepper to give it some extra spice. INGREDIENTS

4 Cups Cauliflower, Riced
1/2 Cup Mozzarella cheese
1 Egg
1 Garlic clove, Minced
salt and black pepper

Chickpeas and Topping

1 Cup BBQ Sauce,
1 Tbsp Olive oil,
1/3 Can Chickpeas, Drained
1/3 Cup Crushed pineapple,
1/2 White onion, Thinly Sliced
1 Tbsp Olive oil,
1 Hot Pepper, Thinly Sliced
Fresh cilantro,

DIRECTIONS

Preheat the oven to 425 degrees F. In a small bowl, mix the chickpeas and pineapple with ½ cup of BBQ sauce and stir together. Refrigerate it for 30 minutes.

Remove the cauliflower stems and cut them into chunks. Pulse the cauliflower in a food processor until it has a similar appearance to rice.

Mix the egg, garlic and cheese with the cauliflower rice, and season with salt and pepper. Stir until the mixture has a doughty texture. On a lightly greased parchment paper or pizza pan, spread the cauliflower dough into the shape of a pizza crust.

Bake until the crust is golden, which takes approximately 10 to 15 minutes.

While the crust is baking, heat oil in a iron skillet. Once the oil is hot, add onions and then reduce the heat. Sauté onions on low heat and stir frequently, until they caramelized. After 10 to 12 minutes, remove the skillet from the heat and set aside.

Remove the golden crust from the oven and spread the remaining ½ cup BBQ sauce on the pizza. Top the pizza evenly with caramelized onions, marinated chickpeas, and jalapeño.

Bake the pizza for 12 to 15 minutes until the dough is completely cooked on the inside.
