As hard as it can be to give up french fries, really, all you need to give up are carb-heavy potatoes. Finding amazing (and delicious) substitutes opens you up to a world of amazing flavors and textures. Our Baked Jicama Fries are a fantastic swap for starchy potatoes. INGREDIENTS

1 Jicama, peeled and cut into fries
2 Tsp Grape seed oil
Sea salt & pepper, to taste
1 Tbsp Parsley, chopped

DIRECTIONS

Cut the jicama into fries, the exact size according to your preference.

Toss your fries in a sealed bag with grape seed oil, sea salt, and pepper.

Place your fires evenly on a baking sheet.

Bake at 375° for 60 minutes or until golden brown. Top with chopped parsley once done.
