Snack on Baba Gannouj & Celery to keep things healthy!

1 Large Eggplant, halved
2 Tbsp Tahini
1/2 Cup Chickpeas, cooked
1 Tsp Cumin powder
2 Tbsp Olive oil
1/2 Cup Lemon juice
2 Tbsp Parsley, fresh
Preheat oven to 375 °F
Place eggplant on a baking sheet and place in the oven until very soft (20-30 minutes).
Remove from the oven, let cool and remove skin.
In a food processor, blend all the ingredients with half of the lemon juice; make a paste. Add leftover lemon juice until desired consistency is reached.
Serve with celery sticks or vegetables of choice.
