Change the rules!  Regular pork sausages bought from the local street vendor are not the best choice for boosting your nutrition.  Make your own sausage dish and rest assured that you can enjoy sausage and still be healthy.

1 Tbsp Olive oil
1 Pound ground pork, mild sausage
2 Tbsp coconut oil
2 Garlic clove, minced
1 Shallot, sliced
1 1/2 Cup Celery, sliced
2 Apple, preferably red, chopped
1/2 Cup Fresh parsley, finely chopped
2 Tbsp Sage, finely chopped
1 Tbsp Thyme, finely chopped
1 Tsp Cinnamon
1 Cup walnut, toasted
salt and black pepper, to taste
2 1/2 Cup Vegetable stock
