Typically, when you think of a salad, you think of lettuce and assorted veggies.

In our Apple Cider Vinegar Cucumber Salad recipe, however, we ditched the lettuce and made cucumber the main ingredient!

This bright dish is fresh and crispy with a light dressing that makes a wonderful side dish. Although we love leafy greens, sometimes it’s good to take a break from them and try something new!

4 Cups Cucumbers, Sliced
2 Tbsp Red onion, Finely chopped
1/2 Tsp Sugar substitute, Stevia
1/4 Cup Apple cider vinegar
1 Tsp Fresh basil
1/2 Tsp Celery Seed
1/4 Cup Extra virgin olive oil
Sea salt & pepper, To taste
